Creamy High-Fiber Berry Chia Pudding (Easy 5-Minute Recipe)

A quick and easy chia pudding made with berries, maple syrup, and almond milk. This creamy, fiber-rich breakfast comes together in just 5 minutes and is perfect for meal prep.

  • 1 cup unsweetened almond milk
  • 1/2 cup frozen mixed berries (strawberries, blueberries, raspberries)
  • 12 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced almonds, shredded coconut, fresh berries, Greek yogurt

Instructions

  1. Mash the berries: In a small bowl, add 1/2 cup of frozen mixed berries. Use a fork to mash them slightly. Set aside.
  2. Mix the chia seeds and milk: In a mason jar or bowl, combine 3 tablespoons of chia seeds and 1 cup of unsweetened almond milk. Stir vigorously for about 30 seconds until no clumps remain.
  3. Add the sweetener and vanilla: Stir in 1-2 tablespoons of maple syrup, 1/2 teaspoon of vanilla extract, and a pinch of salt. Stir until well combined.
  4. Layer the berries: Spoon the mashed berries into the jar with the chia mixture. Stir gently to swirl the berries through the pudding.
  5. Refrigerate: Cover the jar and refrigerate for at least 4 hours, preferably overnight.
  6. Stir again before serving: After the pudding has set, give it a good stir. If too thick, add a tablespoon of milk at a time until desired consistency.
  7. Add toppings and serve: Spoon into a bowl or eat straight from the jar. Top with sliced almonds, shredded coconut, fresh berries, or extra maple syrup. Enjoy cold or let sit at room temperature for 10 minutes.

Notes

For best texture, stir the chia mixture again after 5-10 minutes to prevent clumps. Use full-fat milk for a creamier pudding. The pudding improves after a day in the fridge. Can be stored for up to 5 days.
