A velvety, comforting soup that balances earthy butternut squash with tart and sweet apples. This quick and easy recipe delivers restaurant-quality flavor in under 45 minutes using simple, wholesome ingredients.

  • 1 large butternut squash, peeled, seeded, and cubed
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 medium Granny Smith apple, peeled and diced
  • 1 medium Honeycrisp apple, peeled and diced
  • 4 cups vegetable or chicken broth (low-sodium)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 1/2 teaspoon ground nutmeg
  • Sea salt and black pepper, to taste

Instructions

  1. Cut the butternut squash in half lengthwise, scoop out seeds, peel the skin, and cut the flesh into 1-inch cubes.
  2. Heat olive oil and butter in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds, being careful not to burn it.
  4. Toss in the diced apples and cubed squash. Stir to coat and cook for 2 minutes to release natural sugars.
  5. Pour in the broth, ensuring vegetables are covered by about an inch. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until squash is tender.
  6. Remove from heat and let cool slightly. Use an immersion blender to puree the soup until smooth.
  7. Stir in heavy cream and ground nutmeg. Season with salt and black pepper to taste. Adjust consistency with more broth if needed.

Notes

For a richer flavor, roast the squash cubes at 400°F for 20 minutes before adding to the pot. The soup tastes even better the next day as flavors meld. If reheating, do so gently over low heat to prevent the cream from separating. Avoid Red Delicious apples as they turn mushy.
