Instructions

  1. Prep the cucumbers: Wash cucumbers well. If using English cucumbers, leave skin on. Slice into thin rounds, about 1/8-inch thick.
  2. Salt the cucumbers: Place sliced cucumbers in a colander set over a bowl. Sprinkle with about 1 teaspoon kosher salt and toss gently. Let sit for 15-20 minutes to draw out excess moisture.
  3. While cucumbers sit, prep the onion: Peel red onion and slice as thin as possible. For a milder bite, soak slices in ice water for 10 minutes, then drain and pat dry.
  4. Make the dressing: In a small bowl, whisk together sour cream, Greek yogurt, white wine vinegar, lemon juice, sugar, garlic powder, black pepper, and remaining 1/4 teaspoon salt. Taste and adjust seasoning.
  5. Dry the cucumbers: After 15-20 minutes, rinse cucumbers quickly with cold water to remove excess salt. Pat dry thoroughly with a clean kitchen towel or paper towels.
  6. Combine everything: In a large mixing bowl, combine dried cucumber slices, sliced red onion, and chopped fresh dill. Toss gently to distribute.
  7. Add the dressing: Pour dressing over cucumber mixture and fold gently until every slice is coated. Avoid overmixing to keep cucumbers intact.
