  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 8 ounces cream cheese, softened and cut into cubes
  • 4 cloves garlic, minced
  • ½ cup unsalted butter, cut into pieces
  • 1 cup whole milk, warmed
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, freshly ground
  • Optional: 2 tablespoons fresh chives, chopped, for garnish

Instructions

  1. Prep the potatoes: Peel 3 pounds of Yukon Gold potatoes and cut them into 1-inch chunks. Rinse the chunks under cold water to remove excess starch.
  2. Layer in the slow cooker: Place the potato chunks in your 5-6 quart slow cooker. Add the minced garlic, ½ cup of butter pieces, and 1 teaspoon of salt. Give everything a quick stir.
  3. Add the cream cheese: Nestle the cubed cream cheese among the potato chunks.
  4. Cook low and slow: Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  5. Warm the milk: About 10 minutes before the potatoes are done, warm 1 cup of whole milk in a small saucepan over low heat or in the microwave for 30-45 seconds.
  6. Mash and mix: Once the potatoes are tender, turn off the slow cooker. Using a potato masher or hand mixer, mash the potatoes right in the crockpot. Gradually pour in the warm milk while mashing, until you reach your desired consistency.
  7. Season and serve: Add the ½ teaspoon of black pepper and taste. Add more salt if needed. Transfer to a serving bowl and garnish with fresh chives if desired.

Notes

Don’t open the lid during the first few hours of cooking to avoid adding extra time. For make-ahead, these potatoes are even better the next day—reheat on LOW in the slow cooker with a splash of milk. Avoid over-mashing to prevent gluey texture.
