  • 1 (10-ounce / 283g) can red enchilada sauce
  • 1 (4-ounce / 113g) can diced green chiles (mild or medium)
  • 4 cups (960ml) low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 4 oz (113g) cream cheese, softened to room temperature
  • 1/2 cup (120ml) heavy cream or half-and-half
  • 1 cup (120g) shredded sharp cheddar cheese (plus more for topping)

Instructions

  1. Prep the Aromatics: Dice the onion and mince the garlic.
  2. Layer the Ingredients in the Slow Cooker: Place the chicken breasts in the bottom. Top with onion, garlic, black beans, corn, enchilada sauce, green chiles, cumin, chili powder, smoked paprika, salt, and pepper. Pour chicken broth around the sides.
  3. Cook Low and Slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  4. Shred the Chicken: Remove chicken, let cool slightly, then shred with two forks or a hand mixer.
  5. Create the Creamy Base: In a bowl, mix softened cream cheese and heavy cream until smooth.
  6. Combine Everything: Return shredded chicken to the slow cooker. Stir in cream cheese mixture and shredded cheddar until melted and smooth.
  7. Final Simmer: Let cook for another 15-20 minutes on low. Adjust seasoning if needed.
  8. Serve and Enjoy: Ladle into bowls and top with desired garnishes.

Notes

For a smoother texture, temper the cream cheese by mixing with heavy cream before adding to the soup. For a deeper flavor, sauté the onion and garlic before adding to the slow cooker. The soup thickens as it sits; add a splash of broth when reheating.
