  • 2 large boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1/2 cup Frank’s RedHot or cayenne-based hot sauce
  • 1 cup creamy ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup blue cheese dressing or crumbled blue cheese
  • 2 stalks green onions, sliced

Instructions

  1. Place chicken breasts in the slow cooker. Pour hot sauce and ranch dressing over the chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours until internal temperature reaches 165°F and chicken shreds easily.
  2. Remove chicken from the liquid and shred into bite-sized pieces using two forks. Discard any fat or gristle. You should have about 3 cups of shredded chicken.
  3. Add softened cream cheese to the slow cooker. Use an electric mixer on low speed to break up the cream cheese until smooth, or microwave in 30-second intervals and stir until smooth.
  4. Add the shredded chicken back into the slow cooker with the cream cheese. Stir gently to combine.
  5. Add shredded cheddar cheese and blue cheese dressing. Stir until evenly distributed.
  6. Cover and cook on low for an additional 30-45 minutes, stirring once or twice, until the cheese is melted and the dip is bubbling gently around the edges.
  7. Taste and adjust seasoning if needed. Stir in sliced green onions. Serve immediately while hot.
