  • 1 cup grated carrots

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: splash of buttermilk or whole milk to thin dressing

Instructions

  1. Rinse green and red cabbage under cold water and dry thoroughly using a salad spinner or towels.
  2. Finely shred both cabbages using a sharp knife or mandoline slicer.
  3. Grate the carrots and thinly slice the green onions.
  4. Place all the shredded vegetables in a large mixing bowl.
  5. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, celery seed, salt, and black pepper until smooth.
  6. If a thinner dressing is desired, add 1 to 2 tablespoons of buttermilk or whole milk and whisk again.
  7. Pour the dressing over the shredded vegetables and toss gently but thoroughly to coat evenly.
  8. Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld and cabbage to soften slightly.
  9. Before serving, stir the coleslaw and adjust seasoning with additional salt or vinegar if needed.
