  • 1 tablespoon fresh lemon juice

Instructions

  1. If using frozen black raspberries, thaw completely and lightly mash with a fork to release juices. Set aside about ½ cup (120 ml) of the mashed berries and juice mixture for folding in later.
  2. Pour 2 cups (480 ml) of heavy whipping cream into a chilled large mixing bowl. Using a hand or stand mixer, whip on medium-high speed until soft peaks form, about 3 to 5 minutes. Be careful not to overwhip.
  3. In a separate bowl, combine 1 cup (240 ml) buttermilk, 14 oz (396 grams) sweetened condensed milk, 1 ½ teaspoons vanilla extract, and 1 tablespoon fresh lemon juice. Whisk gently to blend. Add up to 2 tablespoons granulated sugar if desired.
  4. Carefully fold the whipped cream into the buttermilk mixture using a rubber spatula with gentle, sweeping motions to keep the mixture airy and fluffy.
  5. Fold in the reserved mashed black raspberries and juice mixture. For a marbled effect, fold lightly; for uniform flavor, fold thoroughly.
  6. Transfer the mixture to a loaf pan or airtight container. Smooth the top, cover tightly, and freeze for at least 6 hours or overnight. Let sit at room temperature for 5 minutes before scooping.
