A warm, comforting blueberry cobbler topped with a buttery brown sugar and oat crumble, perfect for serving a crowd and easy to prepare.

Ingredients

Scale
  • 5 cups fresh or frozen blueberries (about 750g / 26.5 oz)
  • 3/4 cup granulated sugar (150g / 5.3 oz)
  • 2 tablespoons cornstarch (16g / 0.56 oz)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 cup all-purpose flour (125g / 4.4 oz)
  • 1 cup old-fashioned rolled oats (90g / 3.2 oz)
  • 1 cup packed brown sugar (220g / 7.75 oz)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup unsalted butter (227g / 8 oz), cold and cubed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine blueberries, granulated sugar, cornstarch, lemon zest, lemon juice, and ground cinnamon. Gently toss to coat all the berries without crushing them. Set aside.
  3. In a separate bowl, whisk together flour, rolled oats, brown sugar, salt, and baking powder.
  4. Add cold, cubed butter to the dry ingredients and use a pastry cutter or fork to work it in until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Lightly grease a 9×13 inch baking dish. Pour the blueberry filling evenly into the dish.
  6. Spread the crumble topping evenly over the berries, covering them completely.
  7. Bake for 40 to 45 minutes until the topping is golden brown and the filling is bubbly around the edges. Tent with foil if topping browns too quickly.
  8. Cool for at least 15 minutes on a cooling rack to allow the filling to thicken.
  9. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use frozen berries if fresh aren’t available; thaw and drain excess liquid before mixing. Keep butter cold for the crumble to ensure a crisp topping. Don’t overmix the crumble topping to avoid a dense texture. Let the cobbler cool before serving to prevent runny filling. If crumble feels too dry before baking, sprinkle a teaspoon of cold water over the top. Variations include gluten-free flour substitutions, vegan butter alternatives, and adding nuts or spices for extra flavor.
