Cozy Tomato Garlic Soup with Crusty Bread

A velvety, sweet-tart tomato soup with mellow roasted garlic, served with garlic-rubbed crusty bread. Ready in just 30 minutes, this comforting soup is perfect for cold days and cozy nights.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 head of garlic
  • 2 cans (14.5 oz each) whole peeled tomatoes (preferably San Marzano)
  • 2 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 loaf crusty bread (sourdough, ciabatta, or baguette)
  • 2 tablespoons olive oil (for bread)
  • 1 clove garlic, halved (for bread)
  • Fresh basil leaves, torn (for garnish)
  • Grated Parmesan cheese (for garnish, optional)
  • A drizzle of good olive oil (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and place on a baking sheet. Roast for 10 minutes until soft and golden. Let cool slightly, then squeeze cloves out of skins.
  2. While garlic roasts, heat 2 tablespoons olive oil in a large pot over medium heat. Add chopped onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.
  3. Add canned tomatoes to the pot, crushing them with your hands or a spoon. Stir in dried oregano, red pepper flakes (if using), and a generous pinch of salt and pepper.
  4. Pour in vegetable broth and add roasted garlic cloves. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  5. Remove pot from heat. Use an immersion blender to blend soup until smooth and silky. (If using a regular blender, work in batches and be careful with hot liquid.) Taste and adjust seasoning.
  6. While soup simmers, slice bread into thick pieces. Brush each slice with olive oil and toast in oven or toaster oven until golden and crispy. While still warm, rub cut side of a garlic clove over the surface.
  7. Ladle soup into bowls, top with torn basil and Parmesan, and serve with garlic-rubbed crusty bread. Drizzle with olive oil if desired.

Notes

Don’t skip roasting the garlic—it mellows the flavor. Use good canned tomatoes like San Marzano for best results. Season in layers for depth. Blend carefully to avoid splattering. Toast bread just before serving to keep it crispy.
