Cozy Slow Cooker Apple Cider Cake

A moist, tender winter dessert that uses reduced apple cider for deep flavor, cooked gently in a slow cooker for a fuss-free baking experience.

  • 1 cup apple cider (fresh, unfiltered)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Optional: Streusel topping (rolled oats, brown sugar, cold butter)

Instructions

  1. Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium heat, then reduce heat to low. Simmer until reduced to about ¼ cup. Let cool completely.
  2. Grease the inside of a 4- to 6-quart slow cooker with butter or cooking spray. Line the bottom with a circle of parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
  5. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the cooled reduced cider. Start and end with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared slow cooker. Smooth the top with a spatula. Add streusel topping if using.
  8. Cover and cook on LOW for 2.5 to 3 hours, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the slow cooker for 10 minutes before lifting it out using the parchment paper. Slice and serve warm.

Notes

Ensure the apple cider is fully reduced to a syrup-like consistency to avoid a dense cake. Do not open the slow cooker lid frequently during cooking. Condensation on the lid can drip onto the cake, so wipe it dry halfway through if necessary. The cake is best served warm but keeps well in the refrigerator for up to 5 days.
