  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 sheet refrigerated pie crust (Pillsbury recommended)
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. In a medium bowl, toss the chopped apples with lemon juice.
  2. Add sugar, cinnamon, nutmeg, and cornstarch. Mix until apples are evenly coated. Set aside for 10 minutes.
  3. Preheat oven to 375°F (190°C) and position rack in the middle.
  4. On a lightly floured surface, unfold the refrigerated pie crust.
  5. Using a 2.5 inch (6 cm) round cookie cutter or glass, cut out about 24 circles.
  6. Gently press each dough circle into the cups of a 24-cup mini muffin pan to form crust shells.
  7. Spoon about 1 teaspoon of apple filling into each dough cup, avoiding overfilling.
  8. Cut smaller circles or shapes from remaining crust to cover the filling; fold edges gently or poke holes for steam.
  9. Brush the tops of each mini pie with melted butter using a pastry brush.
  10. Sprinkle cinnamon sugar mixture generously over each pie.
  11. Bake for 18 to 22 minutes until crust is golden and filling bubbles slightly.
  12. Remove from oven and let cool in pan for 5 minutes, then transfer to a cooling rack.

Notes

Keep pie crust cold until assembly to prevent stickiness. If crust edges brown too quickly, cover loosely with foil halfway through baking. Drain excess juice from apples if watery to keep crust crisp. Chilling assembled pies for 10 minutes before baking helps crust hold shape better. For gluten-free, use gluten-free pie crust; for dairy-free, replace butter with coconut oil.
