These sliders transform leftover prime rib into a warm, comforting meal with sweet Hawaiian rolls, melted provolone, and a rich au jus for dipping. A happy accident that became a family favorite, ready in under 25 minutes.

Ingredients

Scale
  • 1 pound leftover prime rib, thinly sliced or shredded
  • 1 package (12 rolls) sweet Hawaiian rolls (e.g., King’s Hawaiian)
  • 6–8 slices provolone cheese
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon Worcestershire sauce
  • 2 cups low-sodium beef broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: Dijon mustard for spreading

Instructions

  1. Preheat oven to 350°F (175°C). Slice leftover prime rib thinly (about 1/4-inch thick).
  2. Make the au jus: In a small saucepan over medium heat, combine beef broth, Worcestershire sauce, garlic powder, onion powder, and dried thyme. Bring to a gentle simmer, then reduce heat to low. Season with salt and pepper (about 1/4 teaspoon each). Keep warm.
  3. Without separating the rolls, slice the entire package of Hawaiian rolls in half horizontally. Place the bottom half in a 9×13-inch baking dish.
  4. Layer half of the provolone slices on the bottom half of the rolls, tearing to fit if needed.
  5. Layer the sliced prime rib evenly over the cheese.
  6. Top with remaining provolone slices.
  7. Place the top half of the rolls over the cheese and beef. Gently press down.
  8. In a small bowl, mix melted butter with 1/2 teaspoon garlic powder. Brush this mixture generously over the tops of the rolls.
  9. Cover the dish with foil and bake for 15 minutes.
  10. Remove foil and bake for another 5-7 minutes, until tops are golden brown and cheese is bubbly around the edges.
  11. Let sliders rest for 5 minutes before slicing along the seams of the rolls.
  12. Serve warm with the au jus in small bowls for dipping.

Notes

Slice prime rib while cold for easier thin slices. Don’t overbake after removing foil to prevent drying. Let sliders rest before slicing to keep them intact. For best results, serve au jus on the side to avoid soggy rolls. Sliders can be assembled ahead and refrigerated for up to 24 hours before baking.
