A quick and easy salmon recipe cooked in foil packets with a sweet-savory honey garlic glaze. Perfect for busy weeknights, this dish delivers tender, flavorful fish with minimal cleanup.

  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for serving)
  • 1 tablespoon sesame seeds, toasted (for serving)
  • Cooked rice or quinoa (for serving)
  • Steamed broccoli or asparagus (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven.
  2. In a small bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, sesame oil (if using), and red pepper flakes (if using). Set aside.
  3. Tear off two large sheets of heavy-duty aluminum foil for each salmon fillet, each about 12 inches long. Lay them on top of each other to create a double layer.
  4. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper. Drizzle with olive oil and rub it in gently.
  5. Place one salmon fillet in the center of each double-layer foil sheet. Drizzle about 2 tablespoons of the honey garlic glaze over each fillet, coating the top and sides. If adding vegetables, arrange them around the salmon now.
  6. Fold the foil over the salmon to create a packet. Bring the two long sides together and fold them over several times to seal. Then fold the short ends up, crimping tightly. Leave a little room for steam to circulate.
  7. Place the foil packets on a rimmed baking sheet. Bake for 12-15 minutes, depending on thickness (14 minutes for 1-inch thick fillets). Salmon should be opaque and flake easily with a fork.
  8. Remove from oven and let the packets rest for 2 minutes. Carefully open the packets away from your face to avoid steam.
  9. Transfer salmon to plates or a platter. Spoon remaining glaze from the foil over the top. Garnish with sliced green onions and sesame seeds. Serve immediately with rice or your favorite side.

Notes

Reserve about 1 tablespoon of glaze before brushing on salmon to drizzle over cooked fish for extra fresh garlic flavor. Let salmon rest 2 minutes after baking to retain moisture. For even cooking, let salmon sit at room temperature for 10 minutes before baking.
