These honey garlic pork chops are quick, easy, and perfect for busy weeknights. The sticky, savory-sweet sauce and tender meat make for a comforting meal that feels special without demanding much effort.

Ingredients

Scale
  • 4 bone-in pork chops, about 1 inch thick
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chicken broth
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 teaspoon sesame seeds (optional, for garnish)
  • Sliced green onions (optional, for garnish)

Instructions

  1. Take the pork chops out of the refrigerator about 15 minutes before cooking to take the chill off. Pat them completely dry with paper towels. Season both sides generously with salt, pepper, and garlic powder.
  2. In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, and chicken broth. Set aside. If using the cornstarch slurry, mix it in a separate small bowl and set aside.
  3. Place a large cast-iron or heavy-bottomed skillet over medium-high heat and add the olive oil. Heat until the oil shimmers and is almost smoking.
  4. Carefully lay the pork chops in the hot skillet without overcrowding. Cook undisturbed for 3-4 minutes until a deep golden-brown crust forms. Flip using tongs and cook for another 3-4 minutes on the second side. The internal temperature should reach 140°F (60°C) for medium. Transfer the chops to a cutting board and tent loosely with foil. Do not clean the pan.
  5. Reduce the heat to medium. Add the minced garlic to the hot pan and stir constantly for about 30 seconds until fragrant. Pour in the honey-soy mixture, scraping up the browned bits from the bottom of the pan with a wooden spoon. Let the sauce simmer for 2-3 minutes until it thickens slightly and becomes glossy.
  6. Remove the pan from heat and whisk in the butter pieces one at a time until the sauce is smooth and velvety. If you want a thicker glaze, whisk in the cornstarch slurry and return to heat for 30 seconds until thickened.
  7. Place the pork chops back into the pan, spooning the sauce over the top. Let them warm through in the sauce for about 1-2 minutes, turning once to coat both sides.
  8. Transfer the pork chops to a serving platter, pour any remaining sauce over the top, and let them rest for 3 minutes. Sprinkle with parsley, sesame seeds, or green onions if using.

Notes

For best results, use bone-in pork chops about 1 inch thick. Pat the chops completely dry before seasoning to ensure a good sear. Do not crowd the pan; work in batches if necessary. Add garlic after removing the pork and reducing the heat to prevent burning. For a thicker sauce, use the cornstarch slurry. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a skillet over medium-low heat with a splash of chicken broth.
