Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1/2 teaspoon dried oregano
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 1 pound boneless, skinless chicken thighs
  • 1/2 pound boneless, skinless chicken breasts
  • 8 ounces wide egg noodles
  • Fresh parsley, chopped (for garnish)
  • Fresh lemon juice (for garnish)

Instructions

  1. Melt the butter in a Dutch oven over medium heat. Add the diced onion, sliced carrots, and celery. Cook for 8-10 minutes, stirring occasionally, until softened and onions are translucent.
  2. Add the minced garlic, dried thyme, crushed rosemary, and oregano. Stir constantly for 30-60 seconds until fragrant.
  3. Pour in the chicken broth and water, then add the bay leaf. Stir, scraping the bottom of the pot to loosen browned bits. Bring to a boil over high heat.
  4. Once boiling, add the chicken thighs and breasts. Reduce heat to medium-low to maintain a gentle simmer. Cover and cook for 25-30 minutes, until chicken is cooked through (165°F internal temperature).
  5. Remove the chicken to a cutting board and let rest for 2-3 minutes. Shred with two forks into bite-sized pieces.
  6. Taste the broth and season with 1 teaspoon salt and 1/2 teaspoon black pepper. Adjust as needed. Remove and discard the bay leaf.
  7. Return the shredded chicken to the pot and stir. Let simmer while you cook the noodles.
  8. Bring a separate pot of salted water to a boil. Cook the egg noodles according to package directions until al dente (about 7-8 minutes). Drain and rinse briefly with warm water.
  9. To serve, place a generous portion of noodles in each bowl. Ladle the hot soup over the top. Garnish with fresh parsley and a squeeze of lemon juice if desired.

Notes

Cook noodles separately to prevent them from becoming mushy. For best flavor, sauté vegetables in butter until caramelized. Use a mix of chicken thighs and breasts for optimal texture and richness. Let the soup rest for 15-20 minutes before serving to meld flavors. Store soup base without noodles in the refrigerator for up to 5 days or freeze for up to 3 months.
