  • 1 bone-in, skin-on turkey breast half (2 to 2.5 pounds / 900g to 1.1 kg)
  • 4 tablespoons unsalted butter (56g), softened
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried)
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt (5g), divided
  • ½ teaspoon black pepper (2g), freshly ground, divided
  • 1 tablespoon olive oil (15ml)
  • ½ cup low-sodium chicken or turkey broth (120ml)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a rack in the middle position. Let the turkey breast sit at room temperature for 20 minutes.
  2. In a small bowl, combine the softened butter, thyme, rosemary, sage, minced garlic, ½ teaspoon salt, and ¼ teaspoon pepper. Mash together with a fork until evenly distributed.
  3. Pat the turkey breast dry with paper towels. Season the cavity (underside) with a pinch of salt and pepper.
  4. Gently slide your fingers under the skin of the turkey breast to create a pocket, being careful not to tear the skin.
  5. Spread about two-thirds of the herb butter directly onto the meat under the loosened skin. Spread the remaining butter over the top of the skin.
  6. Sprinkle the remaining ½ teaspoon salt and ¼ teaspoon pepper over the buttered skin. Drizzle with olive oil and rub gently to coat.
  7. Pour the broth into the bottom of a small roasting pan or 9×13-inch baking dish.
  8. Place the turkey breast in the pan, skin-side up. Roast for 45 to 55 minutes, or until the internal temperature in the thickest part reaches 155°F (68°C). If the skin browns too quickly, tent loosely with foil.
  9. Remove from the oven and transfer the turkey to a cutting board. Let rest for 10 to 15 minutes (the temperature will rise to 160°F/71°C).
  10. Optional: While the turkey rests, place the roasting pan over medium heat. Add a splash of broth or white wine, scrape up browned bits, and simmer for 2 minutes. Strain into a small bowl for a quick pan sauce.
  11. Slice the turkey breast against the grain into ½-inch thick slices. Arrange on a platter and spoon pan sauce over the top. Serve warm.

Notes

For best results, let the turkey sit at room temperature for 20 minutes before roasting. Pat the skin very dry for maximum crispiness. The herb butter can be made up to 3 days ahead. Leftovers keep in the refrigerator for up to 4 days or frozen for up to 3 months.
