  • 1 tablespoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat grill to medium heat (about 350°F). Brush peach halves with olive oil or melted butter and sprinkle with brown sugar if using. Place peaches cut side down on grill and cook for 4-5 minutes until grill marks appear and skin blisters. Flip and grill for another 3 minutes. Remove and set aside.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold cubed butter until mixture resembles coarse crumbs. Stir in milk and vanilla extract until just combined; do not overmix.
  3. Place grilled peach halves cut side up in a cast iron skillet or grill-safe dish. Spoon cobbler batter evenly over peaches, leaving some exposed.
  4. Place skillet on grill at medium heat. Close lid and cook for 20-25 minutes until topping puffs up, turns golden brown, and feels firm to touch. Adjust heat if topping browns too fast.
  5. While cobbler grills, whisk heavy cream, milk, sugar, vanilla extract, and salt in a bowl until sugar dissolves. Chill in refrigerator for at least 30 minutes.
  6. Pour chilled ice cream base into ice cream maker and churn for 20-25 minutes. Transfer to container and freeze at least 2 hours to firm up. Alternatively, freeze base in shallow container and stir every 30 minutes until creamy if no ice cream maker is available.
  7. Serve warm grilled peach cobbler topped with a generous scoop of homemade vanilla ice cream immediately.

Notes

Use medium heat to avoid burning peaches. Cold butter is essential for flaky cobbler topping. If no ice cream maker, use no-churn method by freezing and stirring ice cream base every 30 minutes.
