This cozy gingerbread coffee syrup is a quick and easy addition to any coffee bar, made with simple pantry ingredients like brown sugar, molasses, and warm spices. It delivers a perfectly balanced gingerbread flavor that’s not too sweet, perfect for holiday gatherings or a comforting treat.

  • 1 cup brown sugar, packed
  • 1/4 cup molasses (unsulphured, not blackstrap)
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 teaspoon vanilla extract (pure)
  • Pinch of salt

Instructions

  1. Combine the base: In a medium saucepan, add 1 cup of water and 1 cup of packed brown sugar. Turn the heat to medium and stir gently until the sugar dissolves completely, about 3-4 minutes.
  2. Add the molasses: Pour in 1/4 cup of molasses and stir until fully incorporated.
  3. Spice it up: Add grated fresh ginger, 1 teaspoon cinnamon, 1/2 teaspoon cloves, 1/4 teaspoon nutmeg, and 1/4 teaspoon allspice. Stir until evenly distributed.
  4. Simmer and steep: Bring the mixture to a gentle simmer and let it simmer for 10 minutes, stirring occasionally.
  5. Finish with vanilla and salt: Remove from heat. Stir in 1 teaspoon of vanilla extract and a pinch of salt. Let sit for 2-3 minutes to cool slightly.
  6. Strain and store: Place a fine-mesh strainer over a glass jar or bottle. Carefully pour the syrup through the strainer to catch ginger pieces and spice bits. Press down on solids with the back of a spoon to extract all liquid. Discard solids.
  7. Cool and seal: Let the syrup cool completely at room temperature before sealing. If sealed while warm, condensation can form and dilute the syrup.

Notes

Use fresh ginger for best flavor; dried ginger can be substituted (1 teaspoon) but flavor will be less vibrant. Do not use blackstrap molasses as it is too bitter. For a spicier version, add 1/4 teaspoon cayenne pepper. For a vanilla-orange version, add zest of one orange and increase vanilla to 1 1/2 teaspoons. Syrup can be stored in the refrigerator for up to 3 weeks. Flavors deepen after 24 hours. To reheat, microwave in 15-second bursts or place jar in warm water. For freezing, pour into ice cube trays and store cubes in a freezer bag for up to 3 months.
