A simple, comforting slow cooker soup made with ground beef, beans, and a secret ingredient: dry ranch dressing mix. This 5-ingredient dinner is perfect for busy weeknights and delivers creamy, tangy flavor with minimal effort.

  • 1 pound 80/20 ground beef
  • 1 packet taco seasoning (store-brand or name-brand)
  • 2 (14.5-ounce) cans low-sodium chicken broth
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 (14.5-ounce) can diced tomatoes with green chilies
  • 1 (1-ounce) packet dry ranch dressing mix
  • 1 cup sharp cheddar cheese, divided
  • Heavy cream or sour cream, optional for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon, cooking until no pink bits remain. Drain excessive grease if necessary, but leave some for flavor. Transfer cooked beef to a 6-quart slow cooker.
  2. Sprinkle the taco seasoning over the beef in the slow cooker and stir slightly to coat the meat.
  3. Pour in the chicken broth, diced tomatoes with green chilies, rinsed black beans, rinsed pinto beans, and frozen corn. Stir everything together gently.
  4. Cover the slow cooker and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until flavors have melded and beans are tender.
  5. About 30 minutes before serving, turn the slow cooker to HIGH. Sprinkle the dry ranch dressing mix over the top and stir well to dissolve the powder completely. Let it cook for another 15-20 minutes.
  6. Stir in half of the shredded cheddar cheese. Taste and add salt and pepper if needed. Ladle into bowls and top with remaining cheese and sour cream if desired.

Notes

Add the ranch dressing mix at the end of cooking to preserve the brightness of the herbs. If you prefer a thinner soup, add extra broth. For a vegetarian version, swap beef for plant-based crumble and use vegetable broth. Leftovers store in the fridge for up to 4 days.
