  • ⅓ cup (40 grams) unsweetened cocoa powder (good quality, like Ghirardelli or Hershey’s Special Dark)
  • ½ cup (100 grams) sweetener (coconut sugar, brown sugar, maple syrup, honey, or monk fruit blend)
  • 2 teaspoons ground cinnamon
  • ½ teaspoon chili powder (mild, like ancho or Mexican blend)
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • Optional toppings: mini marshmallows, cinnamon sticks, whipped cream

Instructions

  1. In a small bowl, whisk together the cocoa powder, sweetener, cinnamon, chili powder, and salt.
  2. Pour the milk into a 4- to 6-quart slow cooker.
  3. Slowly add the dry mixture to the milk while whisking constantly until fully dissolved, about 1 minute.
  4. Stir in the vanilla extract.
  5. Cover and cook on low for 2 to 3 hours, stirring once after the first hour.
  6. Taste and adjust sweetness or spice as desired.
  7. Ladle into mugs and serve warm with optional toppings.

Notes

Don’t cook on high to avoid scorching the milk. For plant-based milk, whisk before serving if separation occurs. The flavors deepen overnight, making it even better the next day. Store in an airtight container in the refrigerator for up to 5 days. Reheat on the stovetop or microwave.
