Ingredients

  • Smoked sausage (Andouille or kielbasa), sliced into half-moons
  • White beans (Cannellini or Great Northern), drained and rinsed
  • Kale (Lacinato preferred), stems removed and leaves chopped
  • Yellow onion, diced
  • Garlic cloves, minced
  • Low-sodium chicken or vegetable broth
  • Dried thyme
  • Bay leaves
  • Tomato paste
  • Red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving (optional)
  • Crusty bread for serving (optional)

Instructions

  1. Slice the smoked sausage into half-moon slices and set aside.
  2. Dice the yellow onion, mince the garlic, and chop the kale, removing tough stems.
  3. Add the sliced sausage, onion, garlic, drained white beans, chopped kale, tomato paste, thyme, bay leaves, and red pepper flakes to the slow cooker.
  4. Pour in the low-sodium broth and stir gently to distribute ingredients.
  5. Cover and cook on low for 6-8 hours until flavors meld and beans are creamy.
  6. Taste the soup and adjust seasoning with salt and black pepper if needed. If too thin, cook uncovered for an additional hour.
  7. Remove bay leaves before serving.
  8. Ladle into bowls and top with Parmesan cheese if desired. Serve with crusty bread.

Notes

Smoked sausage and canned beans can be salty, so taste before adding extra salt. For best texture, add kale in the last hour of cooking to keep it bright green, though adding it at the start is acceptable for a softer texture.
