A warm, spiced brunch drink made by slowly heating apple cider and orange juice with cinnamon, cloves, and star anise in a slow cooker, then mixing with chilled sparkling wine just before serving.

Ingredients

  • 1 gallon (4 liters) fresh, unfiltered apple cider
  • 2 cups (480 ml) orange juice
  • 2 bottles (750 ml each) sparkling wine (Prosecco, Cava, or Champagne)
  • 3 large cinnamon sticks
  • 1 teaspoon whole cloves
  • 2 whole star anise
  • 2 large oranges, sliced
  • 1/4 cup brown sugar (optional, to taste)

Instructions

  1. Wash and slice oranges into thick rounds.
  2. Pour the gallon of apple cider into a 6-quart slow cooker.
  3. Add the orange juice and stir gently to combine.
  4. Add the cinnamon sticks, whole cloves, star anise, and orange slices to the slow cooker.
  5. Cover and set the slow cooker to low heat.
  6. Heat the mixture for 2 to 3 hours until warm but not boiling.
  7. Taste the cider; add brown sugar only if needed.
  8. Keep the sparkling wine chilled in the refrigerator until serving.
  9. Pour the warm spiced cider mixture into a large pitcher.
  10. Slowly pour the chilled sparkling wine into the pitcher using a ratio of 1 part wine to 3 parts cider mixture.
  11. Stir gently to preserve bubbles.
  12. Serve immediately in mugs or champagne flutes, garnished with orange slices or cinnamon sticks.

Notes

Do not add sparkling wine to the hot cider in the slow cooker as it will go flat. Keep wine chilled until serving. The spiced cider base can be made up to 5 days in advance and stored in the fridge. For a mocktail version, omit the wine and add a splash of club soda when serving. Avoid boiling the cider to prevent bitter flavors.
