  • 1 pound spicy Italian sausage, casings removed
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 (28-ounce) can crushed tomatoes (preferably San Marzano)
  • 4 cups low-sodium chicken broth
  • 8 lasagna noodles, broken into rough 2-inch pieces
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1 cup whole milk ricotta cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves, thinly sliced
  • Fresh mozzarella pearls (optional)

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage (casings removed) and break it up with a wooden spoon. Cook until browned and crumbly, about 5 minutes. Do not drain the fat.
  2. Reduce the heat to medium. Add the diced onion and cook until softened and translucent, about 3 minutes. Add the minced garlic and red pepper flakes (if using) and cook for another 30 seconds until fragrant.
  3. Stir in the dried oregano and dried basil. Pour in the crushed tomatoes and chicken broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
  4. Bring the soup to a boil. Add the broken lasagna noodles, stirring to ensure they are submerged. Reduce the heat to a gentle simmer and cook until the pasta is tender, about 10-12 minutes, stirring occasionally to prevent sticking.
  5. Once the pasta is tender, reduce the heat to low. Stir in the heavy cream. Taste the broth and adjust seasoning with salt and pepper.
  6. While the soup simmers, mix the ricotta with a pinch of salt and a drizzle of olive oil. Set aside at room temperature.
  7. Ladle the soup into bowls. Drop a generous spoonful of the ricotta mixture in the center. Sprinkle with grated Parmesan, fresh basil leaves, and black pepper. Add fresh mozzarella pearls if desired. Serve immediately.

Notes

The soup will continue to thicken as it cools. If making ahead, add a splash of broth or water when reheating. For best results, add the ricotta at the very end and do not stir it into the soup to prevent graininess. Let the soup rest for 5 minutes after adding the cream to allow flavors to meld.
