This is the meatloaf that converted a skeptic. With a sticky, caramelized brown sugar glaze and a tender, juicy interior, it’s the coziest thing you’ll make all year—perfect for a chilly Sunday dinner or a weeknight when you need something that feels like a hug on a plate.

Ingredients

Scale
  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs (plain panko preferred)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk (whole milk preferred)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 1/2 cup ketchup (for glaze)
  • 1/3 cup packed brown sugar (light or dark)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the sides. Place the pan on a baking sheet.
  2. Heat a small skillet over medium heat with a drizzle of olive oil. Sauté the diced onion for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. In a small saucepan, combine 1/2 cup ketchup, 1/3 cup packed brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon garlic powder. Whisk over medium heat until simmering. Cook for 2-3 minutes, stirring constantly, until sugar dissolves and glaze thickens. Remove from heat and set aside.
  4. In a large mixing bowl, combine ground beef, breadcrumbs, sautéed onion and garlic, eggs, milk, 2 tablespoons Worcestershire sauce, 1/4 cup ketchup, Dijon mustard, salt, pepper, thyme, and parsley. Mix gently with your hands until just combined—do not overmix.
  5. Transfer the meat mixture to the prepared loaf pan. Press gently into an even shape, leaving a slight dome on top. Spread about half the glaze evenly over the top and sides. Reserve the remaining glaze.
  6. Bake for 50-60 minutes. At the 30-minute mark, brush another layer of reserved glaze over the top. The meatloaf is done when the internal temperature reaches 160°F (71°C) in the center.
  7. Remove from oven and let rest in the pan for 10 minutes. This allows juices to redistribute.
  8. Use parchment overhang to lift meatloaf out of the pan. Transfer to a cutting board and slice into 1-inch thick pieces. Serve warm with extra glaze drizzled on top if desired.

Notes

Don’t skip sautéing the onions—raw onions release too much moisture. Use a light hand when mixing to avoid tough meatloaf. Let the meatloaf rest for 10 minutes before slicing. Double the glaze if you want extra for serving. Line the pan with parchment for easy cleanup. For a free-form loaf, shape on a parchment-lined baking sheet and bake for 45-50 minutes.
