A warm, gooey cinnamon roll casserole soaked in a rich custard and topped with tangy cream cheese frosting, perfect for an easy and comforting breakfast.

Ingredients

Scale
  • 1 (12-count) package refrigerated cinnamon rolls (with icing included)
  • 3 large eggs, room temperature
  • 1 cup (240 ml) whole milk (can substitute with almond or oat milk if preferred)
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • 4 ounces (113 g) cream cheese, softened (full-fat for best creaminess)
  • ¼ cup (30 g) powdered sugar, sifted
  • 1 tablespoon (15 ml) milk or heavy cream
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish with butter or non-stick spray to prevent sticking.
  2. Cut the cinnamon rolls into quarters to create bite-sized pieces. Toss gently to loosen sticky spots but keep gooey bits intact.
  3. Arrange the cinnamon roll pieces evenly in the prepared baking dish, leaving some space for custard to soak in.
  4. In a medium bowl, whisk the eggs until combined. Add milk, vanilla extract, and ground cinnamon, then whisk again until smooth and frothy.
  5. Pour the custard evenly over the cinnamon roll pieces. Press down gently with a spatula to help custard soak in. Let sit for 10-15 minutes at room temperature.
  6. Bake uncovered for 35-40 minutes, or until the top is golden brown and custard is set (toothpick inserted should come out clean).
  7. While baking, prepare the cream cheese frosting by beating softened cream cheese with powdered sugar, milk, and vanilla extract until smooth and spreadable. Adjust milk for desired consistency.
  8. Remove casserole from oven and let cool for 5-10 minutes. Spread or drizzle cream cheese frosting generously over the top.
  9. Serve warm, ideally with coffee or hot tea.

Notes

Let the custard soak into the cinnamon rolls for at least 10-15 minutes before baking to avoid sogginess. If casserole browns too fast but is still wet inside, cover loosely with foil for the last 10 minutes. Use room temperature eggs and milk for smooth custard. For ultra-creamy frosting, beat cream cheese until completely smooth before adding sugar. Leftovers reheat well in microwave or oven covered with foil.
