  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup warm whole milk (240ml, around 110°F/43°C)
  • ¼ cup granulated sugar (50g)
  • ¼ cup unsalted butter, melted (56g)
  • 2 large eggs, room temperature
  • 1 tsp salt
  • 1 cup apple butter
  • 2 ½ tsp cinnamon
  • ½ cup packed brown sugar (100g)
  • ¼ cup unsalted butter, softened (56g)
  • 1 cup powdered sugar (120g)
  • 1 tsp vanilla extract
  • 23 tbsp whole milk or cream

Instructions

  1. Activate the yeast by warming milk to about 110°F (43°C). Stir in yeast and 1 tablespoon sugar. Let sit until foamy (5-10 minutes).
  2. In a large bowl or stand mixer, combine flour, remaining sugar, and salt. Add melted butter, eggs, and activated yeast mixture. Mix until shaggy dough forms (10 minutes).
  3. Knead dough by hand on floured surface or with dough hook until smooth and elastic, about 8-10 minutes.
  4. Place dough in greased bowl, cover with towel or plastic wrap, and let rise in warm spot until doubled in size (1 hour).
  5. While dough rises, mix softened butter, apple butter, brown sugar, and cinnamon until well combined.
  6. Punch down dough and roll out on floured surface into 12×16 inch rectangle. Spread apple butter mixture evenly over dough.
  7. Cut dough into 12 strips about 1.5 inches wide. Stack strips, then cut into 12 squares. Stack squares in greased 9×13 inch pan to create pull-apart layers (15-20 minutes).
  8. Cover pan loosely and let dough rise again until puffy (30-45 minutes).
  9. Preheat oven to 350°F (175°C). Bake bread until golden brown and cooked through, about 30-35 minutes. Test with toothpick for moist crumbs.
  10. Mix powdered sugar, vanilla, and milk until smooth to make glaze. Drizzle over warm bread once slightly cooled (5-10 minutes).

Notes

Use warm milk (110°F) to activate yeast properly. Knead dough until smooth and elastic but not sticky. Brush top with melted butter after baking for a shiny crust and moist bread. Glaze consistency can be adjusted with milk or powdered sugar. Dough can be prepared in advance and refrigerated overnight.
