Instructions

  1. Make the dough: In a large bowl, whisk together the melted butter and granulated sugar until well combined (looks like wet sand). Whisk in the eggs one at a time, then the vanilla and almond extracts until smooth and glossy.
  2. Add the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring with a wooden spoon until just combined. Do not overmix.
  3. Chill the dough: Divide the dough into two discs, wrap each tightly in plastic wrap, and flatten into a disc. Refrigerate for at least 2 hours, or up to 3 days. For a quicker chill, freeze for 30 minutes.

  8. Decorate: Divide icing into bowls and color with gel food coloring. Transfer to piping bags or squeeze bottles. Outline cookies with thicker icing, then flood with slightly runnier icing. Use a toothpick to pop air bubbles. Let icing set for at least 2 hours or overnight before stacking.
