  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted butter, cold and cubed (can substitute coconut oil for dairy-free)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice 5-6 ripe peaches into roughly 1/2-inch thick slices. Place them in a medium bowl.
  3. Add 1/3 cup granulated sugar, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 2 teaspoons cornstarch to the peaches. Toss gently to coat evenly.
  4. Transfer the peach mixture to your cast iron skillet and spread it out evenly.
  5. In a separate bowl, combine 1 cup rolled oats, 1/2 cup all-purpose flour, 1/2 cup packed light brown sugar, and 1/2 teaspoon salt. Stir in 1 teaspoon vanilla extract.
  6. Cut in 1/2 cup cold cubed unsalted butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble evenly over the peaches.
  8. Bake the skillet in the oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
