These cozy brown butter chocolate chip cookies are the ultimate comfort food. The nutty, caramel-like depth of the brown butter transforms a classic cookie into something truly special, with perfectly chewy centers and crisp edges.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips or chunks
  • Flaky sea salt for topping (optional)

Instructions

  1. Brown the butter: Place 1 cup unsalted butter in a light-colored saucepan over medium heat. Melt completely, then continue cooking, stirring frequently, until the butter turns golden-amber with brown specks and smells nutty (about 5-7 minutes). Immediately remove from heat and pour into a large mixing bowl to stop cooking.
  2. Cool the browned butter for 10-15 minutes until warm but not hot (temperature of a warm bath).
  3. Add ¾ cup granulated sugar and ¾ cup packed light brown sugar to the cooled butter. Whisk vigorously until smooth and well combined (about 1 minute).
  4. Add 2 large eggs and 2 teaspoons vanilla extract. Whisk until smooth, glossy, and slightly lighter in color.
  5. In a separate medium bowl, whisk together 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  6. Pour the flour mixture into the butter mixture. Fold gently with a rubber spatula until just combined (a few streaks of flour are okay). Do not overmix.
  7. Fold in 2 cups chocolate chips or chunks until evenly distributed. The dough will be thick and slightly sticky.
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 72 hours.
  9. About 15 minutes before baking, preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  10. Use a 1.5-tablespoon cookie scoop to portion dough into balls. Place on prepared baking sheets about 2 inches apart (about 24 cookies).
  11. Bake for 10-12 minutes, until edges are golden brown and centers look slightly underdone and puffy.
  12. Let cookies cool on the baking sheet for 5 minutes. Sprinkle with flaky sea salt if desired. Transfer to a wire cooling rack to cool completely.

Notes

Do not skip chilling the dough—it prevents spreading and creates a chewy texture. Watch the butter carefully while browning; it can burn quickly. For softer cookies, bake on the shorter side (10 minutes). For crispier cookies, bake 1-2 minutes longer. The dough can be frozen for up to 3 months.
