This one-bowl banana bread uses brown butter for a nutty, caramelized flavor. It’s simple, cozy, and perfect for any occasion.

Ingredients

Scale
  • ½ cup (1 stick / 113g) unsalted butter
  • 3 medium ripe bananas (about 1 cup mashed / 240g)
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60g) plain yogurt or sour cream
  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Line your 9×5-inch loaf pan with parchment paper, leaving an overhang on the two long sides. Lightly grease the exposed ends with a little butter or non-stick spray.
  2. Brown the butter. Place the ½ cup (113g) of butter in a small saucepan over medium heat. Let it melt, then swirl the pan occasionally. After about 4-5 minutes, the butter will start to foam. Watch closely—it will turn from pale yellow to a golden amber color, and you’ll smell a nutty aroma. Once you see brown specks forming at the bottom, remove it from the heat immediately. Pour the brown butter into a heatproof bowl or directly into your large mixing bowl to stop it from cooking further. Let i…
  3. Mash the bananas. In the large mixing bowl with the cooled brown butter, add the 3 ripe bananas. Mash them with a fork until mostly smooth, with a few small lumps remaining. You want about 1 cup of mashed banana.
  4. Add the wet ingredients. To the bananas and butter, add the ¾ cup (150g) granulated sugar, 1 large egg, 1 teaspoon vanilla extract, and ¼ cup (60g) plain yogurt or sour cream. Whisk everything together until smooth and well combined. The mixture will look a little glossy.
  5. Add the dry ingredients. Sprinkle the 1½ cups (190g) all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon cinnamon (if using) over the wet mixture. Use a rubber spatula to fold everything together gently. Stir just until you no longer see streaks of flour—about 10 to 12 folds. Do not overmix, or the bread will be tough.
  6. Pour and bake. Scrape the batter into your prepared loaf pan and spread it into an even layer. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be a deep golden brown. If the top is browning too quickly after 40 minutes, tent the loaf loosely with aluminum foil.
  7. Cool completely. Let the bread cool in the pan on a wire rack for 15 minutes. Then use the parchment overhang to lift it out and transfer it directly to the rack to cool completely. Don’t slice it while it’s still warm—it needs to set, or it will crumble.

Notes

Don’t walk away from the butter while browning. If bananas aren’t super ripe, place them (unpeeled) on a baking sheet in a 300°F oven for 15 minutes. When folding in flour, a few tiny streaks are okay. For a crackly top, sprinkle turbinado sugar over batter before baking.
