  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 (15 oz) can black beans, rinsed
  • 1 (15 oz) can pure pumpkin puree
  • 1 cup vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent and soft, about 3-4 minutes.
  2. Add minced garlic and cook for the last 30 seconds, stirring constantly to prevent burning.
  3. Add chili powder and cumin to the pot. Stir into the onions and garlic and toast for about 60 seconds to release essential oils.
  4. Pour in the rinsed black beans and the can of pumpkin puree. Stir well to combine.
  5. Add vegetable broth and bring the mixture to a gentle boil.
  6. Reduce heat to low and simmer uncovered for 15-20 minutes, stirring occasionally, until the chili thickens and flavors meld.
  7. Taste and season with salt and pepper as needed. Serve hot.

Notes

Ensure you use pure pumpkin puree, not pumpkin pie filling. For a thicker consistency, mash some beans against the side of the pot. Toasting the spices is crucial for deep flavor. This recipe is naturally gluten-free and can be made vegan by using plant-based broth.
