  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract (optional)
  • 1 tablespoon maple sugar (optional)
  • A pinch of nutmeg or cardamom (optional)

Instructions

  1. Preheat your air fryer to 325°F (160°C).
  2. Rinse the pumpkin seeds thoroughly under cold water in a colander. Remove any large pieces of pumpkin pulp. Pat the seeds dry with paper towels and let them sit on a paper towel for 5 minutes.
  3. In a medium mixing bowl, combine the dry seeds, melted butter, sugar, cinnamon, and salt. Stir well with a spatula until every seed is coated. If using vanilla extract, drizzle it in now.
  4. Transfer the coated seeds to the air fryer basket in a single layer. Do not overcrowd; cook in batches if necessary.
  5. Cook for 8-10 minutes, shaking the basket every 4 minutes. The seeds should be golden brown and fragrant when done.
  6. Let the seeds cool completely in the basket for about 10 minutes. They will continue to crisp up as they cool.
  7. Transfer to a bowl and enjoy! Break up any clumps with your fingers.
