These creamy, tangy salsa verde chicken tacos come together in under 30 minutes with just three simple ingredients. Perfect for busy weeknights or last-minute gatherings, they deliver rich, soul-soothing flavor without any fuss.

Ingredients

Scale
  • 1.5 pounds (680 g) boneless, skinless chicken breasts or thighs
  • 1 cup (240 ml) salsa verde
  • 4 ounces (113 g) cream cheese, softened
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)
  • Warm corn or flour tortillas (optional)

Instructions

  1. Pat the chicken dry with paper towels and season generously with salt and pepper.
  2. Heat a large skillet over medium-high heat with a drizzle of oil. Brown the chicken for 3-4 minutes per side until golden. The chicken does not need to be fully cooked through.
  3. Reduce heat to medium-low and pour the salsa verde over the chicken. Scrape up any browned bits from the bottom of the pan. Bring to a gentle simmer.
  4. Cover the skillet and let simmer for 15-20 minutes until the chicken is cooked through and tender (internal temperature of 165°F for breasts, 175°F for thighs).
  5. Transfer the chicken to a cutting board and shred with two forks into bite-sized pieces. Return the shredded chicken to the skillet.
  6. Cut the softened cream cheese into small cubes and add to the skillet. Stir gently until the cream cheese melts completely into the sauce, about 2 minutes. Taste and adjust seasoning.
  7. Warm tortillas directly over a gas flame or in a dry skillet for about 30 seconds per side. Stack in a clean kitchen towel to keep warm.
  8. Spoon the creamy salsa verde chicken into warm tortillas. Top with fresh cilantro, a squeeze of lime, and any other desired toppings. Serve immediately.

Notes

For best results, use full-fat cream cheese and do not add it too early—always shred the chicken first. Browning the chicken is essential for flavor. If the sauce is too thin, simmer uncovered for 2-3 minutes; if too thick, add a splash of chicken broth or water. Leftover filling can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
