A tender, juicy meatloaf made in the slow cooker with a sticky, sweet and tangy glaze. This easy dinner requires minimal prep time and uses simple pantry staples for a comforting, crowd-pleasing meal.

Ingredients

  • 2 lbs ground beef (80/20 ratio)
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs (plain dry or panko)
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Lightly grease the inside of a 4-quart slow cooker with cooking spray or oil.
  2. In a small bowl, whisk together ketchup, brown sugar, Dijon mustard, and Worcestershire sauce. Set aside.
  3. In a large mixing bowl, combine ground beef, diced onion, minced garlic, breadcrumbs, beaten eggs, milk, salt, and pepper. Mix gently with hands until just combined; do not overmix.
  4. Transfer the meat mixture to the prepared slow cooker and shape into an oval loaf, roughly 8 inches long.
  5. Pour about three-quarters of the glaze over the top of the meatloaf, spreading it evenly to let it drip down the sides. Reserve the rest for serving.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest in the crockpot for 10 minutes before slicing.
  8. Slice into thick pieces and drizzle with the reserved glaze.

Notes

Do not overmix the meat to avoid a dense texture. Use a meat thermometer to ensure the internal temperature reaches 160°F. If the glaze is too thin after cooking, boil the remaining juices on HIGH for 5 minutes to thicken. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
