A simple, 5-ingredient (plus pantry staples) breakfast bar recipe that recreates the chewy, dense texture of a beloved Portland bakery. These bars are fiber-rich, easy to meal prep, and perfect for busy mornings.

  • 3 cups old-fashioned rolled oats
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 2 tablespoons chia seeds
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease.
  2. In a large mixing bowl, combine the rolled oats, chia seeds, and salt. Stir to distribute evenly.
  3. In a separate medium bowl, whisk together the nut butter, honey, egg, and vanilla extract until smooth and glossy. Soften nut butter if necessary.
  4. Pour the wet mixture over the dry ingredients. Fold together with a rubber spatula until every oat is coated and the mixture is thick and sticky.
  5. Fold in the chocolate chips last to prevent them from breaking apart.
  6. Transfer the mixture to the prepared pan. Press firmly and evenly into the pan using the back of a spoon or greased hands to ensure chewy bars.
  7. Bake for 20-25 minutes, or until edges are golden brown and the center is set.
  8. Cool completely on a wire rack (about 30 minutes) to allow bars to firm up before slicing.
  9. Lift bars out using parchment paper and slice into 8 or 12 squares.

Notes

Do not use quick oats or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Press the dough firmly into the pan to prevent crumbling. Bars must cool completely before cutting. Can be substituted with sunflower seed butter for nut-free or maple syrup/flax egg for vegan.
