  • 1 lemon (for juicing)

  • 1/2 cup salted butter (softened)
  • 68 ounces sharp cheddar cheese (block style, sliced into thin wedges, such as Cabot)
  • 4 ounces brie cheese (optional)
  • 1/2 cup pecans (toasted)
  • 1/2 cup walnuts (raw or toasted)
  • 1 cup assorted crackers (water crackers and buttery Ritz-style)
  • 1/2 cup pretzel sticks
  • 1/4 cup dried cranberries
  • 2 tablespoons fresh rosemary sprigs (for garnish, optional)
  • 1/4 cup dark chocolate chips (or chopped dark chocolate bar)

Instructions

  1. Prep the apples (5 minutes): Wash and dry your apples. Core them and slice into thin wedges (about 8-10 slices per apple). Toss them in a bowl with the juice of half a lemon to prevent browning. Set aside.
  2. Toast the nuts (3 minutes): In a dry skillet over medium heat, toast the pecans and walnuts for 2-3 minutes, shaking the pan frequently, until they smell fragrant. Be careful—they burn fast! Remove from heat and let cool.
  3. Slice the cheese (2 minutes): Cut the sharp cheddar into thin triangles or rectangles. If using brie, leave it in a wedge or slice it into smaller pieces. Let the cheese sit at room temperature for 10 minutes before serving for better flavor.
  4. Warm the caramel (30 seconds): Pour the caramel sauce into a small microwave-safe bowl and heat for 10-15 seconds until it’s pourable. Stir once.
  5. Assemble the board (5 minutes): Place the bowl of caramel sauce in the center or slightly off-center of your board. Arrange the apple slices in a fan pattern around one side. Place the cheese wedges on the opposite side. Fill in the gaps with clusters of nuts, pretzels, crackers, dried cranberries, and chocolate chips. Drizzle a little extra caramel or honey over the apple slices and cheese if desired.
  6. Garnish and serve (1 minute): Tuck a few sprigs of fresh rosemary around the board for a pop of green. Serve immediately, with small plates and napkins for guests.

Notes

Prep apples and nuts up to 2 hours in advance, but assemble just before serving to prevent soggy crackers and pretzels. For best flavor, let cheese sit at room temperature for 15 minutes before serving. Toast nuts for extra flavor. Keep pretzels away from moist ingredients.
