Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter
  • 2 cups pecans, roughly chopped
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup light corn syrup
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish with butter or non-stick spray.
  2. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until it foams, subsides, and brown specks form (about 4-5 minutes). Remove from heat immediately and pour into a heat-safe bowl.
  3. Toast the pecans (optional): Spread chopped pecans on a baking sheet and toast in the preheating oven for 5-7 minutes until fragrant. Set aside to cool.
  4. Make the filling: In a large mixing bowl, whisk together brown sugar, granulated sugar, corn syrup, eggs, vanilla extract, and salt until smooth. Slowly drizzle in browned butter while whisking continuously. Whisk in 2 tablespoons flour until well combined.
  5. Assemble the filling: Spread toasted pecans evenly in the greased baking dish. Pour the filling mixture over the pecans, ensuring they are all coated.
  6. Make the cobbler topping: In a medium bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, and salt. Add cold butter cubes and cut into the flour mixture using a pastry cutter or fork until it resembles coarse meal with pea-sized butter pieces.
  7. Finish the topping: Make a well in the center of the flour mixture and pour in milk and 1 teaspoon vanilla. Stir with a fork just until combined. The dough will be thick and slightly sticky.
  8. Assemble the cobbler: Drop spoonfuls of the cobbler topping over the pecan filling, leaving some gaps for the filling to bubble up.
  9. Bake: Place the dish on a baking sheet and bake for 35-40 minutes, until the topping is golden brown and the filling is bubbly and thickened. The center should be set but slightly jiggly.
  10. Cool and serve: Let the cobbler cool on a wire rack for at least 20 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Let the cobbler cool for at least 20 minutes before serving to allow the filling to thicken. For best results, use room temperature eggs to prevent scrambling when adding warm brown butter. If the topping browns too quickly, tent with foil for the last 10 minutes of baking.
