A simple, stunning winter fruit salad with a two-ingredient honey lime dressing that lets the fruit shine. Perfect for holiday gatherings or a quick, healthy side dish.

Ingredients

Scale
  • 2 navel oranges, peeled and cut into rounds or supremes
  • 2 blood oranges (optional), peeled and segmented
  • 1 large grapefruit (pink or ruby red), peeled and segmented
  • 2 medium apples (Honeycrisp or Fuji), cored and diced
  • 2 ripe but firm pears (Bartlett or Bosc), cored and diced
  • 1 cup pomegranate arils
  • 1/4 cup fresh mint leaves, thinly sliced
  • 3 tablespoons honey (mild variety like clover or orange blossom)
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon lime zest (optional)

Instructions

  1. Prep the citrus: Using a sharp knife, cut off the top and bottom of each orange and grapefruit. Stand the fruit on one flat end and slice off the peel and white pith in strips, following the curve of the fruit. Hold the fruit over a bowl and cut between the membranes to release the segments (supremes). Remove any seeds and large pieces of pith.
  2. Prep the apples and pears: Core the apples and pears, then dice them into bite-sized chunks (about 1/2-inch cubes). Leave the skin on for color and texture, or peel if preferred. Toss with a squeeze of lime juice to prevent browning if not serving immediately.
  3. Prep the pomegranate: If using a whole pomegranate, score the skin around the middle, then break it open over a bowl of water. The arils sink, and the white pith floats. Drain the arils and pat dry. If using pre-packaged arils, just open the container.
  4. Make the dressing: In a small bowl, whisk together the honey, fresh lime juice, and lime zest until the honey is fully dissolved. Taste and adjust with more lime for tartness or more honey for sweetness.
  5. Combine the fruit: In a large mixing bowl, gently combine the citrus segments, diced apples, diced pears, and pomegranate arils. Be careful not to mash the fruit.
  6. Add the dressing: Pour the honey lime dressing over the fruit. Use a rubber spatula or clean hands to gently toss everything together until the fruit is evenly coated.
  7. Garnish and serve: Sprinkle the sliced mint over the top. Give one last gentle toss, or leave the mint on top for presentation. Serve immediately, or let sit for 10 minutes to let flavors meld.

Notes

Prep fruit and dressing up to 8 hours ahead and store separately. Combine just before serving to keep fruit crisp. For a vegan version, swap honey with maple syrup or agave nectar. Add toasted nuts for crunch.
