Ingredients

Scale
  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 3 large shallots, thinly sliced into rings
  • 3 tablespoons olive oil, divided
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the green beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for exactly 3 minutes. Drain immediately and transfer to a bowl of ice water to stop the cooking. Let them sit for 2 minutes, then drain well and pat dry.
  3. Make the crispy shallots: Toss the thinly sliced shallots with 2 tablespoons of olive oil, a pinch of salt, and a few grinds of black pepper. Spread them in a single layer on a small baking sheet. Bake for 12-15 minutes, stirring halfway through, until golden brown and crispy. Set aside to cool.
  4. Sauté the mushrooms: In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and cook without stirring for 3 minutes. Then stir and cook for another 2-3 minutes until browned. Add the minced garlic and fresh thyme, and cook for 30 seconds until fragrant.
  5. Make the creamy sauce: Sprinkle the flour over the mushrooms and stir constantly for 1 minute. Slowly pour in the milk while whisking, then add the heavy cream. Keep whisking until the sauce thickens, about 3-4 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  6. Combine everything: Add the blanched green beans to the skillet with the sauce. Stir gently until every bean is coated. Transfer the mixture to a 9×13-inch baking dish and spread into an even layer.
  7. Make the topping: In a small bowl, mix the panko breadcrumbs with the grated Parmesan cheese. Sprinkle this mixture evenly over the casserole.
  8. Bake: Place the dish in the preheated oven and bake for 20 minutes, until the sauce is bubbly and the topping is golden brown.
  9. Finish with shallots: Remove the casserole from the oven and immediately sprinkle the crispy shallots on top. Let it rest for 5 minutes before serving.

Notes

Don’t skip the ice bath for the green beans—it keeps them bright and crunchy. Slice shallots evenly for even crisping. Toast the flour properly to avoid a raw taste. Use room temperature dairy to prevent the sauce from seizing. Season as you go for layered flavor.
