Moist and flavorful pumpkin muffins loaded with chocolate chips and topped with a crunchy, buttery streusel. This recipe uses a secret hot coffee trick to deepen the spice flavor and ensure a tender crumb.

  • ½ cup brown sugar, packed (for streusel)
  • ¼ cup cold unsalted butter, cubed (for streusel)
  • ½ tsp cinnamon (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together 2 cups flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. In a separate bowl, whisk melted butter, sugar, eggs, and pumpkin puree until smooth. Stir in the hot coffee.
  4. Pour wet mixture into dry ingredients. Gently fold together with a spatula until just moistened. Do not overmix.
  5. Fold in chocolate chips gently.
  6. In a small bowl, combine ½ cup flour, brown sugar, ½ tsp cinnamon, and cold cubed butter. Mix with a fork or fingers until it resembles coarse crumbs.
  7. Divide batter evenly among muffin cups, filling about ¾ full.
  8. Sprinkle streusel topping evenly over each muffin and press down slightly.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use unsweetened pumpkin puree, not pumpkin pie filling. Room temperature ingredients help the batter incorporate better. The hot coffee enhances the pumpkin and spice flavors without making the muffins taste like coffee. Do not overmix the batter to avoid tough muffins. Rotate the pan halfway through baking for even browning.
