Best No-Meringue Royal Icing for Gingerbread Houses

best hard-setting royal icing for gingerbread houses - featured image

This quick and easy royal icing sets like concrete, perfect for building gingerbread houses or decorating cookies. Made with simple pantry ingredients and no meringue powder, it’s a foolproof recipe born from a happy kitchen accident.

Ingredients

Scale
  • 1 large egg white (from a pasteurized egg, if concerned about raw eggs)
  • 1 ½ cups confectioners’ sugar (sifted if lumpy)
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Prepare your workspace: Ensure bowl and whisk are completely clean and dry, free of any grease or oil.
  2. Separate the egg: Crack the egg carefully, separating the white from the yolk. No yolk should be present.
  3. Whisk the egg white: Whisk by hand for about 30 seconds until frothy and slightly bubbly. (Or use a stand mixer with whisk attachment on medium speed for 20 seconds.)
  4. Add lemon juice and vanilla: Pour in lemon juice and vanilla extract (if using). Whisk for another 10 seconds to combine.
  5. Sift in half the confectioners’ sugar: Sift half the sugar into the bowl to prevent lumps. Whisk gently at first, then vigorously for about 1 minute until thick and glossy.
  6. Add remaining sugar: Sift in the rest of the sugar and whisk for another 1-2 minutes until the icing is thick, smooth, and shiny, holding a soft peak when the whisk is lifted.
  7. Test consistency: Lift the whisk – the icing should fall in a thick ribbon and hold its shape for a few seconds before melting back. If too thin, add a tablespoon more sugar; if too thick, add a drop of water at a time.
  8. Use immediately or store: Cover the bowl with a damp paper towel or plastic wrap pressed directly onto the surface. Store in an airtight container in the fridge for up to 3 days. Whisk again before using.

Notes

For a vegan version, use 2 tablespoons aquafaba (chickpea liquid) instead of egg white. For a thicker icing for piping details, add an extra tablespoon of confectioners’ sugar. For a thinner flood consistency, add a few drops of water at a time. Keep the bowl covered with a damp paper towel to prevent crusting. Let icing dry completely (2-3 hours or overnight) before moving decorated items.
