A creamy, spicy, and tangy buffalo chicken dip made lighter with Greek yogurt and blended cottage cheese. Perfect for game day or a cozy night in, this easy slow cooker recipe delivers all the flavor with a fraction of the fat and calories.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts (about 23 large)
  • 1 cup low-fat cottage cheese
  • 1/2 cup plain non-fat Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup hot sauce (e.g., Frank’s RedHot Original)
  • 1 tablespoon ranch seasoning mix (from a 1 oz packet)
  • 1/4 cup blue cheese crumbles (optional)
  • Celery stalks and carrot sticks (for serving)

Instructions

  1. Prepare the Cottage Cheese ‘Cream’: Add the 1 cup of low-fat cottage cheese to your blender or food processor. Blend on high for 45-60 seconds, or until the mixture is completely smooth and creamy with no visible curds. Scrape down the sides once if needed. Set aside.
  2. Add Everything to the Crockpot: Place the raw chicken breasts in the bottom of your slow cooker in a single layer. On top of the chicken, add the blended cottage cheese, plain Greek yogurt, 1/2 cup of hot sauce, and 1 tablespoon of ranch seasoning mix.
  3. Give it a Quick Stir: Use a spatula to give the ingredients on top a little swirl to combine the wet ingredients. The chicken will be mostly untouched.
  4. Cook on Low: Cover the crockpot with the lid and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the chicken is cooked through and tender (internal temperature of 165°F).
  5. Shred the Chicken: Carefully remove the cooked chicken from the crockpot and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.
  6. Combine and Finish: Return the shredded chicken to the crockpot. Add the 1 cup of shredded reduced-fat cheddar cheese. Stir everything together until the cheese is fully melted and the dip is uniformly creamy. Taste and add more hot sauce if desired.
  7. Serve Immediately: Switch the slow cooker to the ‘Warm’ setting. Sprinkle optional blue cheese crumbles on top. Serve directly from the crockpot with celery sticks, carrot sticks, or other dippers.

Notes

If the dip looks thin after shredding the chicken, cook on low with the lid off for an additional 15-20 minutes to thicken. For a milder dip, use mild buffalo wing sauce or add a tablespoon of honey. For a keto-friendly version, use full-fat cream cheese and full-fat Greek yogurt.
