These Light Forgotten Cookies are a game-changer for meringue skeptics. With a crisp exterior and a chewy, fudgy center, they’re made with simple pantry staples and rest overnight in a turned-off oven for effortless, impressive results.

Ingredients

Scale
  • 3 large egg whites, at room temperature
  • ¾ cup (150g) granulated sugar
  • ¼ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ½ cup (85g) semi-sweet chocolate chips
  • ½ cup (55g) chopped pecans, toasted if desired

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. Wipe your mixing bowl and beaters with a bit of lemon juice or white vinegar to remove any grease.
  3. Separate your eggs carefully, ensuring no yolk gets into the whites.
  4. Beat the egg whites on medium speed until frothy and bubbly, about 30-45 seconds.
  5. Add the cream of tartar and salt, and continue beating on medium speed until soft peaks form, about 2 minutes.
  6. With the mixer running on medium-high speed, gradually add the sugar, one tablespoon at a time, taking 15-20 seconds between each addition.
  7. Once all sugar is added, increase speed to high and beat until stiff, glossy peaks form, about 5-7 minutes total. The meringue should feel smooth, not gritty.
  8. Beat in the vanilla extract on low speed just until combined, about 10 seconds.
  9. Fold in the chocolate chips and pecans using a rubber spatula with a gentle cutting and folding motion until evenly distributed.
  10. Drop heaping tablespoons of the meringue onto the prepared baking sheets, spacing them about 2 inches apart.
  11. Place the baking sheets in the oven and immediately turn the oven OFF. Do not open the oven door.
  12. Leave the cookies in the oven for at least 8 hours or overnight. They are ready when they lift easily off the parchment paper and feel dry to the touch.

Notes

Do not open the oven door during the overnight rest. Humidity can cause chewy cookies; make on dry days. For best texture, serve at room temperature. Store in an airtight container at room temperature for up to two weeks. Freeze for up to three months.
