Ingredients

Scale
  • 2 to 2.5 lbs (900g to 1.1 kg) beef sirloin tip roast or top round, trimmed of excess fat
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2.5 g) black pepper
  • 1 lb (450 g) cremini mushrooms, finely chopped
  • 2 shallots, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons (30 g) unsalted butter
  • 1 teaspoon (2 g) fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/4 cup (60 ml) dry white wine or beef broth
  • Salt and pepper to taste
  • 2 tablespoons (30 g) Dijon mustard
  • 6 to 8 slices prosciutto or thin ham
  • 1 sheet frozen puff pastry (about 10x15 inches or 25x38 cm), thawed
  • 1 egg, beaten with 1 tablespoon (15 ml) water (for egg wash)

Instructions

  1. Prepare the Beef (15 minutes): Pat the beef roast dry with paper towels. Season generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat until it shimmers. Sear the beef on all sides, including the ends, until deeply browned, about 2-3 minutes per side. Transfer to a plate and let cool completely. Brush the cooled beef all over with Dijon mustard. Set aside.
  2. Make the Duxelles (20 minutes): In the same skillet, melt the butter over medium heat. Add the shallots and cook until soft, about 3 minutes. Add the garlic and cook for another 30 seconds until fragrant. Add the finely chopped mushrooms and thyme. Cook, stirring occasionally, until the mushrooms release their liquid and it evaporates completely, about 8-10 minutes. Pour in the white wine or broth and cook until absorbed. Season with salt and pepper. Spread the duxelles on a plate to cool comple…
  3. Assemble the Log (15 minutes + 30 minutes chilling): Lay a large piece of plastic wrap on your counter. Arrange the prosciutto slices on the plastic wrap in a slightly overlapping rectangle, big enough to wrap around the beef. Spread the cooled mushroom duxelles evenly over the prosciutto. Place the mustard-coated beef in the center. Using the plastic wrap, lift the prosciutto and duxelles up and around the beef, forming a tight log. Twist the ends of the plastic wrap to seal it tightly. Refrige…
  4. Wrap in Pastry (10 minutes + 15 minutes chilling): On a lightly floured surface, roll out the puff pastry sheet to about 1/8-inch (3 mm) thickness. Unwrap the chilled beef log and place it in the center of the pastry. Brush the edges of the pastry with the egg wash. Fold the pastry over the beef, tucking the ends under like a present. Press the seams to seal. Place the wrapped Wellington seam-side down on a parchment-lined baking sheet. Brush the entire surface with egg wash. Score the top with …
  5. Bake (35-45 minutes): Preheat your oven to 400°F (200°C). Bake the chilled Wellington for 35-45 minutes, until the pastry is golden brown and puffed. The internal temperature should reach 125°F (52°C) for medium-rare, or 135°F (57°C) for medium. Let it rest on the baking sheet for at least 15 minutes before slicing.

Notes

Don’t skip the chilling steps—they prevent a soggy pastry. Make sure the duxelles is cooked until very dry. Use a meat thermometer for perfect doneness. Leftovers can be reheated in a 300°F (150°C) oven for about 10 minutes.
