Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and sliced into rounds
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 2 cups wide egg noodles
  • ¼ cup fresh dill, chopped
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, sliced carrots, and sliced celery. Cook for 5 to 7 minutes, stirring occasionally, until the onions are translucent and the carrots start to soften.
  2. Add the minced garlic and stir for about 30 seconds until fragrant.
  3. Pour in the chicken broth, scraping the bottom of the pot to loosen any browned bits. Add the dried thyme, bay leaf, 1 teaspoon salt, and ½ teaspoon black pepper. Stir well.
  4. Add the chicken breasts or thighs to the pot, submerging them as much as possible. Bring to a gentle boil, then reduce heat to medium-low and simmer covered for 15 to 18 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  5. Carefully remove the chicken from the pot using tongs and let it rest for about 5 minutes. Meanwhile, increase the heat to medium-high and bring the broth back to a boil.
  6. Add the egg noodles to the boiling broth and cook according to package directions (usually 6 to 8 minutes), stirring occasionally. While the noodles cook, shred the chicken using two forks or a hand mixer on low speed.
  7. Reduce the heat to low. Return the shredded chicken to the pot. Stir in the fresh dill and lemon juice (if using). Taste and adjust salt and pepper as needed.
  8. Remove the bay leaf and discard. Let the soup sit for 2 to 3 minutes off the heat before serving.

Notes

For best texture, use chicken thighs. Cook noodles just until al dente to avoid mushiness. Add dill at the end to preserve its bright flavor. For leftovers, consider cooking noodles separately and adding them fresh when reheating. The soup thickens as it sits; add a splash of broth when reheating.
