These soft and chewy peppermint bark cookies come together in under 30 minutes using a white cake mix, chocolate chips, and crushed peppermint. They’re the perfect last-minute holiday treat that tastes like Christmas in every bite.

  • 1/2 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/3 cup crushed peppermint candies or candy canes
  • 1/4 cup crushed peppermint candies (for topping)
  • Optional: 2 tablespoons melted white chocolate (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, combine the cake mix, melted butter, egg, and vanilla extract. Stir until a soft dough forms.
  3. Fold in the semi-sweet chocolate chips, white chocolate chips, and 1/3 cup of crushed peppermint until evenly distributed.
  4. Scoop the dough into 1.5-tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheets.
  5. Bake for 10-12 minutes, or until the edges are set and lightly golden. The centers will look slightly soft.
  6. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. While the cookies are still warm, sprinkle the remaining 1/4 cup of crushed peppermint over the tops and press gently.
  8. If using the optional white chocolate drizzle, wait until the cookies are completely cool, then drizzle the melted white chocolate over them.
  9. Let the cookies cool completely before serving or storing.

Notes

For best results, use room temperature egg and slightly cooled melted butter. If dough is too sticky, chill for 15-20 minutes. Bake one sheet at a time for even browning. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
