Ingredients

Scale
  • 2 medium sweet potatoes (about 1 pound), peeled and cut into 1-inch cubes
  • 12 slices regular-cut bacon, each cut crosswise into thirds
  • 3 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Fresh chopped parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil. If you have a wire rack, place it on top of the lined sheet.
  2. Peel and cut the sweet potatoes into 1-inch cubes. Try to keep them uniform in size so they cook evenly.
  3. Place the sweet potato cubes in a medium mixing bowl. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  4. Spread the cubes in a single layer on the prepared baking sheet (or on the wire rack). Roast for 10 minutes. They should be partially tender but still hold their shape.
  5. While the sweet potatoes are par-cooking, cut each bacon slice crosswise into thirds to make 36 small pieces.
  6. Remove the par-cooked sweet potato cubes from the oven. Let them cool for 2-3 minutes until they’re cool enough to handle.
  7. Wrap each cube with a piece of bacon, securing the ends underneath the cube. If the bacon seems loose, use a toothpick to hold it in place. Place the wrapped cubes back on the baking sheet or wire rack, seam-side down, leaving space between each bite.
  8. Warm the maple syrup slightly (about 10 seconds in the microwave). Using a pastry brush, lightly brush the top of each bacon-wrapped bite with maple syrup.
  9. Return the baking sheet to the oven and bake for 15-18 minutes, until the bacon is crispy and the maple syrup has caramelized. Halfway through, flip each bite over and brush the other side with a little more maple syrup.
  10. Remove from the oven and let them rest on the baking sheet for 3-5 minutes. Transfer to a serving platter. Garnish with chopped fresh parsley or chives if desired. Serve warm.

Notes

Don’t skip the par-cook step—it ensures the sweet potatoes are tender when the bacon crisps. Use regular-cut bacon, not thick-cut. Space bites out on the baking sheet for even crisping. Flip halfway through for even glazing. For best texture, serve fresh from the oven. To make ahead, par-cook sweet potatoes and cut bacon up to a day ahead; store separately in the fridge.
