5-Ingredient Crockpot Pork Chops with Easy Homemade Gravy

Tender, fall-apart pork chops in a rich, silky gravy made with just five simple ingredients. This set-it-and-forget-it slow cooker recipe delivers comfort food that respects your time and budget.

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 packet (1 ounce) dry onion soup mix
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • Salt and pepper to taste
  • 1 tablespoon oil (optional, for searing)

Instructions

  1. Pat pork chops dry with paper towels. Season both sides lightly with salt and pepper.
  2. Optional: Heat oil in a skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown.
  3. Place pork chops in the bottom of a 5-6 quart slow cooker in a single layer.
  4. In a small bowl, whisk together cream of mushroom soup, chicken broth, and dry onion soup mix until smooth. Pour mixture evenly over pork chops.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until pork chops are fork-tender.
  6. About 15 minutes before serving, remove pork chops to a plate and cover loosely with foil.
  7. In a small bowl, whisk together cornstarch and cold water until smooth. Pour slurry into slow cooker with cooking liquid, whisking gently. Cover and cook on HIGH for 10-15 minutes until gravy thickens.
  8. Return pork chops to slow cooker, spoon gravy over top. Let warm through for a few minutes, then serve immediately with extra gravy.

Notes

For best results, use bone-in pork chops at least 1 inch thick. If using boneless chops, reduce cooking time by about 1 hour. Don’t lift the lid during cooking. For a richer flavor, try golden mushroom soup. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
