A simple and delightful summer mocktail bar featuring floral lavender lemonade and naturally sweet peach iced tea, perfect for backyard gatherings or solo refreshment.

Ingredients

Scale
  • For the Lavender Lemonade:
  • 68 medium fresh lemons (yielding about 1 cup/240 ml lemon juice)
  • 1/2 cup (120 ml) lavender syrup (store-bought or homemade, culinary-grade recommended)
  • 4 cups (1 liter) filtered water
  • 1/2 cup (100 g) granulated sugar or honey for natural sweetness
  • Ice cubes
  • Fresh lavender sprigs (optional, for garnish)
  • For the Peach Iced Tea:
  • 4 black tea bags
  • 2 large fresh ripe peaches, sliced (or frozen peaches as substitute)
  • 23 tbsp (3045 ml) honey or agave syrup (adjust to taste)
  • 4 cups (1 liter) filtered water
  • Lemon slices (optional, for brightness)
  • Ice cubes

Instructions

  1. Prepare the Lavender Lemonade:
  2. Juice the lemons until you have about 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds and pulp for a smoother lemonade.
  3. In a small saucepan, combine 1/2 cup (100 g) sugar with 1/2 cup (120 ml) water. Heat gently until sugar dissolves completely, stirring occasionally. Let cool.
  4. Mix the lemon juice, cooled sugar syrup, and 1/2 cup (120 ml) lavender syrup in a large pitcher.
  5. Add 3 1/2 cups (880 ml) cold filtered water to the mixture and stir well.
  6. Taste and adjust sweetness if needed—add more lavender syrup or sugar syrup if you like it sweeter.
  7. Refrigerate for at least 1 hour to let flavors meld and chill.
  8. Serve over ice, garnished with fresh lavender sprigs or lemon slices.
  9. Prepare the Peach Iced Tea:
  10. Bring 4 cups (1 liter) of filtered water to a boil.
  11. Remove from heat and add 4 black tea bags. Let steep for 5 minutes for a strong, robust flavor.
  12. Remove tea bags and stir in honey or agave syrup while the tea is still warm.
  13. Add sliced peaches to the warm tea and let it cool to room temperature, allowing the peaches to infuse their flavor.
  14. Transfer to the fridge and chill for at least 2 hours or overnight for best flavor.
  15. Before serving, add ice cubes and optional lemon slices for a fresh zing.

Notes

Roll lemons on the counter before juicing to maximize juice yield. Adjust sweetness to taste. Chill drinks well before serving to prevent dilution from melting ice. Steep tea for 5 minutes to avoid bitterness. Store lemonade up to 3 days and iced tea up to 2 days in the fridge. Add sparkling water to lemonade for a fizzy version. Substitute lavender syrup with rosemary or basil syrup for a different floral note. Use nectarines or plums instead of peaches for variation.
